Fill a champagne bucket with ¾ ice and ¼ water (water will chill it faster); leave enough room in the bucket for the bottle and chill champagne glasses. Peel the toil off the cork exposing the wire holding the cork in place; untwist wire.
Holding a napkin over the cork, twist the bottle (not the cork!) until you feel it is sufficiently loosened; apply slight pressure to one side of the cork to allow escape from the bottle. Champagne should be opened quietly – don’t pop the cork!
If the person ordering is a man, fill his glass half-way; wait until he tastes it and gives his approval, then fill ladies’ glasses first, then gentlemen’s. If a lady orders, fill her glass, fill other ladies’ glasses followed by the gentlemen.
Return champagne bottle to the bucket and cover it with a napkin. If the champagne bottle is placed upside down in the bucket, it’s empty. You should ask the person who ordered it if he/she would care for another.
